I am totally confused by iPhoto, icloud, & iTunes?

What is going on with these new versions? They stink, the explanations are beyond tedious to read? The way that iTunes greys out songs, & how erased pics on the iphone get erased automatically? WTH, how do you free up room if you can't erase stuff without losing it?

iPhone 6, iOS 8.3

The songs if they don't play, delete them and download, import or sync them again.
