Mail: what is MD5 Challenge-Response?

My IMAP accounts in Mail are correctly marked Use SSL and Authentification: password. Yet after some time they have changed from Password to MD5 Challenge-Response.

What IS that?

And how come Mail changes this by itself?

It's a method by which the server authenticates the client.

Mail tries to use the best settings for the selected server. If the accounts are working, you don't need to interfere.
