Can I disable activity app?
Is there any way to disable it? I go to thel gym regularly for cardio and weight work--the reminders from the activity app are just annoying.

Go to the Watch app on the phone, select Activity, and turn off all the reminders you don't want

An aside. Going to the gym and getting regular exercise is great. However, sitting still for long periods still isn't good for you. So, the point reminders to stand up is a little different than just getting more exercise. But fortunately, as Nick pointed out, you don't have to take that advice if you don't want to. 🙂
I have everything turned off in the iPhone app and I'm still getting updates from it.
So you've gone into the Apple Watch app, Notifications>Activity>Stand Reminders and turned that off? That's the only alert I ever get from Activity. What other alerts are you seeing?
The reminders in the Watch app have been turned off since about the second day I've had it, but I'm still getting several updates a day on what it thinks I've done. As I said, I don't care, and would like to make it shut up and go away.
So you've gone to Settings>Notifications>Activity and set Progress Updates to "None"? Turned off Goal Completions, Achievements and Weekly Summary?

I agree that it's a bit unclear that there is a choice to be made there. Glad you were able to make the adjustments you needed.
This does not stop the App it self and is still running in the back ground. What can I do to stop the app from running so to help with battery life

On your iPhone, in the Watch app, go to: My Watch > Privacy > Motion & Fitness > turn off Fitness Tracking and also, if you wish, Heart Rate.
