In iTunes, under "Edit - Emoji & Symbols" there are hundreds of icons that are not on our iPhones. What are these used for and are we able to download them onto our phones??

Have you updated your phone to iOS 8.3? Numerous Emojis were added with that update.
As far as I know there's no way to get those on iOS devices at this time unless you copy and paste each one. If you were savvy you could export the keyboard from your Macbook and develop a 3rd party keyboard containing those symbols that could be used on your iOS device.
If you're able to copy and paste them, I would suggest creating keyboard shortcuts for them.
Gotcha. But why are they there? There's hundreds probably. The "Emoji's" that we have on our phone is listed plus several other categories. Doesn't make sense why they'd be there if we couldn't load them onto our iPhones.
