Since upgrading to Yosemite 10.3.3 I can no longer save scans from Preview. (Nor edit them either). I've tried uninstalling and reinstalling the computer, using Image Capture instead (can't save from that either). From my research online, it looks like there is an incompatibility with HP printers and the latest Mac OS.
Any help really appreciated here.

The current version of Yosemite is 10.10.3
What scanner are yo using?
Have you checked for printer/scanner Updates in the Mac App Store?

Yes, I have the current version of Yosemite. The problem seemed to start after the latest updates (to other apps)
I'm using HP printer scanner F4280 series.
There are no updates available from the Mac App store, everything is up to date there.
When I scan, the scanned image appears successfully, but for some reason I can no longer edit or save the image. Here is what happens, the options are greyed out.
Same thing, i can scan using Image Capture but not save the image...
