As far as losing data, your data should be backed up, and if you restore to that backup, you should have no issue. When you activate, you will be asked to activate as new, or from backup. You need to choose from backup, the last one that you made.

I always turn off the iPhone before ejecting one sim and using another but that is a personal preference to minimise any software glitches
