how do I change a photo from color to black and white like in I Photo?

In Preview? Tools -> Adjust Colour and drag the Saturation slider left.

You can also do it in Photos if you're using Photos instead of iPhoto.
1 - in the Filter section of the Edit mode there are three filters:
