Creates a loop of the recording
When I record software instruments, GarageBand creates a loop of the recording. Does anyone know how to turn off this feature?

That is strange.
In Logic you can set the Loop parameter on a Track so any new recorded Region will automatically be looped. However, that feature is not available in GarageBand as far as I know. Somehow, that flag must be turned on by accident.
Does it happen with a new Track or when you create a new Project?
At the moment, I guess, you you have to hit the L key to turn Loop off for the selected Region
