how do i unpair an app that is using my bluetooth?

I recently installed a bluetooth wireless headset in my office and I want to use it to make phone calls. I can make phone calls just fine, but when I press the pause/hold button it brings up my Itunes music and start playing it. I want to know how I can disconnect Itunes and have my headset (when i push hold) hold my call instead. Please help! I can follow any instructions given, i just can't figure it out on my own.
