Apple have sent a tracking number but no information on where to input the number for tracking purposes. Does anyone know what courier they use? Or if Apple have somewhere on their site I can input the tracking number?

It will vary depending on where you are. Over the years in the USA I've had them use airborne express, UPS, FedEx and once, the postal service.
FEdex is usually 12 or 15 digits (for ground) and UPS usually have a letter in the second place.

A Google search shows Apple do this a lot; tracking number but no courier info.
IF it is all numbers, 12 or 15 digits long, probably Fedex so just try putting it in their tracking web page and see if it fails or pulls up something. They seem to have been favoring Fedex the past few years, or so it seems to me.
IF it was sent in an email, does it appear as a hyperlink? If so, the shipper Tracking URL should be embedded in the number, so just click on it.
It is a hyperlink but it's dead.
