Just do the following to perform a factory default reset on the old iPad:

Settings > General > Reset
Choose "Erase All Contents and Settings.

Before erasing the old iPad may I suggest going app by app to make sure all your info transferred. Maybe even hold off erasing the old one for a few days just to be sure.
