Sadly no. I don't have the arrows. I'm sure it's something simple. The portrait oriented spreadsheet fills the page if I print it, but the view on my laptop screen is only half.

Yes, the only way to see all of a portrait document on a landscape screen is to zoom out.
If by "spreadsheet" you mean a table, you can freeze the Header rows. They will stay put as you scroll the table up or down.
Click anywhere in the table and Menu > Table > Freeze Header Rows.
