Today I opened my Notes app to find that all my notes have disappeared. When I opened the app yesterday they were all there. I haven't backed up my phone for several weeks now, so I can't recover my notes that way.
Is there any way to retrieve them?

You would have to tell us a whole lot more about your situation for us to reasonably help you.
Where are your notes stored? iCloud? If so, might you have lost your connection to iCloud? Somewhere else (like Outlook)? What have you done to sever the connection to wherever your notes are stored?
My notes are stored on my iCloud but as far as I know I have done nothing to sever the connection.
Check Settings > iCloud and make sure you are signed in.
Check Settings > iCloud > Notes = "On".
On your computer, go to http://www.icloud.com and sign in, go to Notes and see if you find the notes there.
Unfortunately, I was unable to find my notes following the steps you provided.
Although the default account set to my notes right now is iCloud, could it be possible to have made notes without it being synced to an account?
Anything is "possible" - but then there would have been a change made by you to sever the connection to iCloud - or to create a connection to iCloud if one had not been there previously.
If I created a connection to iCloud, would my notes prior to the connection be cleared if they were not connected before?
