How do I configure an iPad to trust all certificates from my CA?

I have a wireless solution setup that uses PEAP to encrypt the authentication transaction, however all our iPads don't trust any certificates that our RADIUS server uses. I used Apple Configurator to install our CA certificate onto the iPads, however all certificates used in PEAP that are issued by that CA aren't trusted on the iPad and I must instruct it to trust be trusted when authenticating to the network.

I also tried using a wildcard certificate from GeoTrust, but despite the certificate being from a trusted CA all users are prompted to trust the certificate. I double checked and according to apple here: List of available trusted root certificates in iOS 8 - Apple Support , GeoTrust's CA is trusted by the iPad and yet certificates issued by the CA aren't trusted when using PEAP.

iPad 2, iOS 8.3
