iPhoneYou can put your watch on silent directly from the watch. Swipe up to bring up Glances. The glance farthest to the left has the options to put the Watch on Airplane mode, DND, silent.

It's all or nothing. However, it seems logical to me that, if you don't want someone disturbed by an alarm, you also wouldn't want them disturbed by the rest of the noises the watch can make. It's very quick to toggle on and off.
