HDD to SSD conversion on my MBP 17

When I replace the HDD with the OWC SSD that I bought for the purpose do I have to restore the old OS (it's on Mavericks and up to date) or can I just do a clean install and start from scratch? There are a lot of apps & data on that drive that I don't want on the new on and what I do I can grab from Time Machine. How do I go about installing the new OS?
