I'm trying to burn a completed project that was shot in 1080p to a recordable Blu-Ray disk but the computer isn't even reading it. Right now I'm using a Memorex BD-R (6x 25GB Single Layer) disk. What should I be using since this obviously isn't it?

That should work as far as the type of disc is concerned.
I'm thinking the issue may be the burner/connection, what is the brand and specs/connection type.
I use BD-R 6x Verbatim without issue, Memorex should be fine as well.

Unless I have misunderstood your setup.
You need a Blu-ray burner to burn a Blu-ray disc.
Your info says

You can burn an AVCHD disc onto DVD if the movie is not longer than about 20/30 mins.

I think you're right. I've only burned cd's and regular dvd's on this iMac before. This was my first time trying a blu-ray but I guess the built-in disk drive isn't capable of burning those? So I'd have to buy an external blu-ray burner. Any recommendations on that front?
