My old Email is all that comes up for the App store. Can I change it to my current Email on my old iPad?

You may need to sign out of your account then edit your settings here, http://appleid.apple.com
You can change your Apple ID email at http://appleid.apple.com .
To log in to a different email on you iPad, go to Settings -> iTunes and App Store. Click on the old email, choose log out, then log in with the new email address.
