language changed itself on my i-pad when travelling and won't change back
When I was in France my i-pad changed keyboard and spellcheck to French. Was able to change keyboard back to English but not spellcheck. How can I do this?

The spellchecking should be done based on the keyboard language that you've selected - you now just have the one keyboard selected in Settings > General > Keyboard > Keyboards, you no longer have the French keyboard selected (or if it's still selected there you have the other keyboard selected when using it) ? If you do only have the one keyboard then try selecting a different keyboard, exit the screen, and then go back and it back to the keyboard that you want.
