How do I change A PDF format so I can edit the document

I am trying to edit a PDF document but I am not sure how to change the format so I can edit this document.

Originally I have to put the document into a PDF format to send it out, but do not have a clue how to change it back to a document that I can edit.

Adobe Acrobat Pro has a Convert PDF to Word feature and the software has a free 30 day demo

I don't exactly know if it's a full featured demo or if there are restrictions or watermarks as I have the full version.
