If you want to track your progress using the Apple Watch Workout app, take a look at the settings for "Outdoor Cycle" in the resource below:
Use the Workout app on Apple Watch - Apple Support
https://support.apple.com/en-us/HT204523To get started, open the Workout app, then choose one of the workout options:
- Outdoor Cycle*
- Depending on your workout, you can set a Calorie, Distance, or Time goal. Your Apple Watch will alert you when you reach your goal, and give you progress updates during your workout.
Workout also shares information with Activity on your Apple Watch, so that your workouts count towards your activity goals.
- For GPS accuracy when you walk, run, or cycle outdoors, select the appropriate Workout and bring your iPhone.* This will also help calibrate the accelerometer in Apple Watch for times when you don’t have GPS, such as during treadmill workouts or when you're running outside without your phone.
- To get the most accurate heart rate measurement when you use Workout, make sure your Apple Watch fits snugly on top of your wrist. The heart rate sensor should stay close to your skin.

* For GPS accuracy, make sure that Location Services and Motion Calibration & Distance are both on. To check Location Services on your iPhone, tap Settings > Privacy > Location Services. To check Motion Calibration & Distance on your iPhone, tap Settings > Privacy > Location Services > System Services.
I hope this information helps ....
