Connecting to Mac Mini with different resolution

I have a Mac Mini running Mavericks which is connected to a screen whose maximum resolution is 1280x1024. I would like to connect to this computer over the network from a laptop running Ubuntu 14-04 with a resolution of 1366x768 without having scroll bars. In other words I would like the Mac Mini to output a screen with 1366x768 resolution.

I have OSX server installed on the Mac Mini. How do I need to configure the Mac Mini and what software do I need on the Ubuntu box, and how configured, to show me a screen image from the Mac Mini in the resolution of the laptop?

In other words, I am not looking for a program to show me the existing screen picture on the Mac Mini. I want it to be a separate login.

TIA

Mac mini, OS X Mavericks (10.9)
