Since the most recent software update for the Watch, my microphone that would allow me to dictate an answer to a text message is grayed out. The microphone on the Watch itself works fine for other applications, such as answering a call.

From your post I see that the dictation microphone is grayed out when using messages on your Apple Watch. As a first step for troubleshooting this issue, I'd like you to please restart your Apple Watch by following the directions below.
Restart Apple Watch. To turn off Apple Watch, press and hold the side button until the sliders appear, then drag the Power Off slider to the right. To turn Apple Watch back on, hold down the side button until the Apple logo appears.

I also have the same issue. If I press hard enough in the microphone it will allow me to choose the language. I hit English and then it goes back to be grayed out. What is the problem here?
I turned off the watch. I turned off the iPhone. I turned off both, and still have the same problem.
