From your post I see that the dictation microphone is grayed out when using messages on your Apple Watch. As a first step for troubleshooting this issue, I'd like you to please restart your Apple Watch by following the directions below.
Restart Apple Watch. To turn off Apple Watch, press and hold the side button until the sliders appear, then drag the Power Off slider to the right. To turn Apple Watch back on, hold down the side button until the Apple logo appears.

Jul 7, 2016 9:28 PM in response to bellwatcherby teli63,I also have the same issue. If I press hard enough in the microphone it will allow me to choose the language. I hit English and then it goes back to be grayed out. What is the problem here?
I turned off the watch. I turned off the iPhone. I turned off both, and still have the same problem.

Try checking the following settings on your iPhone:
- Settings > General > Keyboard - check that Enable Dictation is turned on.
- Settings > General > Restrictions - check that the restriction for Siri & Dictation is not enabled
- Settings > General > Siri - disable, pause for a few moments and then re-enable Siri.
