how do i restore a back up that been deleted of restore it still in services on mac

i had a few of the same i phones de to problems now i see i deleted the only ok back up from the 4th month 2015 of i tunes i no longer have this i phone the replacement one still shows on i tunes how do i get my nack up i want from services back to devices restore the last back up is no good i no this and apple no the i phone i have now does not do or have what i want or need i should have a 100 and odd contacts this has got 300 and odd , this been going on 2 months now made the mistake as the all just said my name i phone now in real mess as i have took phone back to factory yet again there must be some way of getting it out of services the 1 i want with correct date where i phone workred correct my mac can see date ect so must be there on my windows old laptop on windows 7 it does not see it at all infact it does not see mac or i pad just been in cloud it is only showing last back up from this i phone that works incorrect no one in apple can seem to help get this i phone 2 work correct now I've made this mess i do not no how to help myself so i cloud shows back i do not want mac still has it in services but not in devices just services any one with any advice and help i will be very grateful this bit is my mistake but thats after 2 months of useless help of apple so i no longer have the i phone i want back up of apple do i got this 1 thats never worked correct as replacement , to be honest do not no whats going on in apple but there service has gone down hill fast think windows is running it now its done that bad
