I've reset my Apple Watch, turned it on and off and done several different things, and I've had no success. None of the apps seem to be opening. Everything stays in that loading screen and then times out.
Any suggestions/solutions?

It help to do a force restart on both your Apple Watch and your iPhone:
iPhone: press and hold both the Sleep/Wake and Home button for at least 10 seconds, until you see the Apple logo.
Restart your iPhone, iPad, or iPod touch - Apple Support
Apple Watch: press and hold both the side button and Digital Crown for at least 10 seconds, until you see the Apple logo.
The next option would be to unpair and then re-pair your Apple Watch.
You can do this from the iPhone Apple Watch app:
My Watch > Apple Watch > Unpair Apple Watch
Then re-pair it again (most data and settings will be restored from your Apple Watch backup on your iPhone):

Same here. Had this before and the problem was solved after putting watch and phone to rest during the night. But now I'm experiencing it again and after a night of charging my watch the problem persists..

Thanks for that. Unfortunately this didn't work for me. Tried it several times but my watch still won't load apps or even the weather complication... Is there maybe a particular order in which phone and watch need to be restarted?
Thanks Jonathan! That did indeed do the trick. I was hesitant to do this at first as I wasn't sure whether or not I would have to set up my watch from scratch again but the process is just as smooth as restoring an iPhone from a backup. Great! 🙂
