So what I would like to happen is that the battery stops charging and the computer runs on the power supply only, and once the battery drops below any given percent, the battery gets recharged..
Why do you say that the battery does not get overcharged ?

Nope, when the battery reaches 100% charging stops.

Since the battery never drops below 100%, it is being constantly charged...
So to avoid this I would like to know if there is an app or a way to make the laptop run only with the power supply..

in a previous mac I had I could actually take the battery out and just run on the power supply, so i would like to do the same on this laptop, but it is not as easy to take the battery out..

But you said "Since the battery never drops below 100%, it is being constantly charged...". That is why I suggested the SMC reset. There is a contradiction.
Note that if the battery would be disconnected from the MBP, the OSX would then throttle the CPU and there would be a degradation of performance.
Be advised that the OSX controls all battery charging and there is no user intervention. Why don't you run Apple diagnostics and see if that picks up any problems:
