Is it possible to remove old recognized computers by my iPod so that I can add new computers?

There is no need to add or remove anything.
Just connect it and sync, if that is what you want to do.

If I want to sync my iPod with a new computer iTunes says something like "this iPod is synced by another computer and the number of recognized computers by your iPod is 2/3 etc. You can have at most 5 recognized computers". Suppose now I want to sync my iPod with a sixth computer. Can I remove my old computer?

That tells you how to switch syncing computers and not lose anything. Just what do you want?
