Q: Syncing mp3s use to older versions

I am having a serious issue with iTunes 12 and hope someone can help. I've been using an older version of iTunes for years where I could drag a mp3 from my desktop into my iTunes and sync then would be added to my devise. Seems now I cannot do that. When I go into summary, music and click on sync music, click on selected playlist albums ETC the songs I try to add from ,file, add files to library  and click sync they do not show up on my ipad. If I click entire music library over 500 songs are added and don't know where they all are located, some Ive not seen for over 6 years which I don't want and they are not individual checked. The old version was so much easier where I could drag, drop and also right click a song in itunes to delete it then sync and it would delete from my devise.  I have iphone 6 128gb, ipad 3rd gen 32gb and mini ipad 16gb and trying to keep music separately from each devise. I sing live with soundtracks and use on of my i pads with back tracks app for live use and trying to keep the soundtracks separate from other ipad and iphone. I am using windows 7 64 bit. Can I down grade to an older version where it was so much simpler and how. Or any advise WOULD be great. Ive tried to add a couple songs but will not sync unless ""entire library" is checked and then I have unwanted songs on the ipad . Thanks for advise

Personally I think the easiest way to manage is with a playlist folder for each device into which you can put one or more regular or smart playlists that you want synced to it. You manage your playlists in iTunes and then click sync when ready to update the device.

The check box is best used for things like bonus interview tracks which you keep in the library, but wouldn't want synced to a device or to come up in shuffle mode.
