Hi musicsapp,
Click on the table to select it.
Format Panel > Table > Alternating row colour
Click on the colour chooser to the right and pick a darker shade.

Ian, Thanks for the reply.
Unfortunately, this doesn't help. Regardless of what color I choose, the document still prints white cells with black text. This goes for the "Fill Color" option as well. Any other ideas?
I am lead to believe there is some sort of print setting that I am missing ...

Hi Drew,
It works here. At first I thought that the Alternating row colour was just for on-screen viewing, but it printed OK on paper.
This is what I see on screen and on paper:
Light grey for Header row and column, dark grey that I picked from the colour chooser (see Wayne's reply).
Just a shot in the dark, but does your printer have a setting such as black and white only?
From Numbers, try Menu > File > Print... to see Print Setup.
Click on Print...
In the Print Preview dialogue, choose (bottom left) PDF > Open PDF in Preview.
Do the alternating fills show?
