If I understand your post correctly, you are trying to take photos off of your iPhone which were synced to it from iTunes. If this is the case, then to remove the photos you will simply need to deselect those items from the iTunes syncing window.
Delete synced photos
- In iTunes, locate and click on your device.
- Click Photos.
- Choose "Selected albums" and deselect the albums or collections you want to delete.
To delete all synced photos, deselect "Sync Photos from" and, when asked, click "Remove photos." - Click Apply.
