Hi - I have a Mac Mini hooked up to my television via HDMI. Is there a way that I can easily project my laptop to that television using the Mac Mini? I'd like to do something similar to the way I can use AirPlay with an Apple TV to project the laptop.

A late 2012 MM is AirPlay capable, you can use it the same way as your MacBook Air or MacBook Pro with AirPlay. If you already have the AppleTV then you have everything you need!
There is an app called Sofaplay, http://highlvl.com/sofaplay/ which if you have a smart TV, will give similar results as Apple TV as far as streaming from your computer. It doesn't mirror your computer.
Officially the answer is no in that the built-in AirPlay is from a computer or iOS device to an AppleTV and not to a computer. However as indicated by garyfromrio linda there are various third-party pieces of software which act as Airplay 'servers'.
