Trying to eke out a little more time for a 2008 (3,1) MP. Would a flashed GTX 680 be a good upgrade from an ATI Radeon 5770? Would be using mostly for Photoshop/Lightroom. Any caveats with this and a 3,1?

Yes if the apps you are using use CUDA for using the GPU for processing.

Adobe do use CUDA so a GTX-680 is a good choice.
680s are scarce, old, replaced with non-Apple GTX 970/980s
