Questions about Microsoft Exchange

My company uses Microsoft Exchange for email. My mailbox is getting very full. I'd like to archive some older email.

I thought I'd moved some into a new folder, but it only copied it, leaving my box just as full as before.

From what I understand, If I delete the mail from my regular email box, the next time Mail looks foe new mail, it will re-download everything deleted from the server.

How do I have mail get new mail, but not download old mail that I've moved?

Also, I get email on my iPhone. I suppose I'd want to do the same on that.

Does some archiving need to be done by the server administrator?

Perhaps I didn't phrase it correctly. Primarily, I get and send email on my iMac. I also get it on my iPhone. I'm most concerned about my overly full email box on my iMac.

My IT department is a bit over-burdened right now, due to a co-worker moving on to a new job. And I got my iMac to speed up after deleting some intel files that were eating up the processor's capacity.

I'd still like to archive some old email.
