I have found, at least until Apple updates the software so manual modification is enabled for Exercise and Stand as is for Move, change of all 3 can be modified simply by ressetting the watch in the Settings from the Watch itself.
I've performed this once to modify it from Low to Medium and was successful and even retained my previous week's daily updates to the app.
Once at it's highest level, modfiicatoin of the numerical value is at least available for Move.
Note: This only works if you do not retrieve the previous backup that is created when resetting the watch.
Currently I'm considering resetting my Apple Watch yet again as though I were setting it up for the first time to change Activity to High.
As a 9-5 office worker in the IT Field, performing my functions the entire time sitting down 5 days a week, I still meet the full settings for Move and Stand easily.
Since all the apps are looking back to the iPhone for information the only other update that was required when re-initializing the watch was changing the default time from Cupertino to NY.
