The verification email would have come to that same email address, and they must have been able to respond to create the appleid. You should contact the email provider and get the account reset or cancelled.

I assume that like most online accounts the account is created and saved once the information is needed. It simply is not activated until the e-mail link is clicked. So despite having never been activated all of their information was still stored under my address. My e-mail is first initial last name at gmail. Half the e-mail I get is for other people.

Since it is actually your email, and you have control of the account (i.e. it is not compromised) ask them to help you to restore it to an active AppleID.
