It sounds like the Mail application on your Mac doesn't connect to Gmail consistently. This does sound frustrating, and removing/re-adding the account was a good step.
You mentioned you tried settings mentioned in other threads, and I wanted to be sure you also tried Mail Connection Doctor:
Use Mail Connection Doctor - Apple Support
This can help to identify connection issues with your email accounts in Mail, and has some troubleshooting tips for specific error messages.
