How do I save voicemails to my Mac?

Voicemails are not stored as part of an iPhone backup.
I suppose you could try to record the voicemail and then save the recording to the Mac. (I'm not certain that is legal everywhere.) But in general the voicemail is saved as the cellular carrier directs it to be saved.
Third party software, such as TouchCopy will allow you to copy your voicemail to the computer. TouchCopy will work on both the Windows and Mac platforms.
Voicemail messages ARE stored as part of an iTunes backup of your phone, but Apple does not give you an easy way to get them out.
I've personally used a product called iBackupBot, which has a free trial, to extract the voicemails out of a backup. It works great and only takes a few minutes. The messages in AMR format, which should play on your mac, but you may want to use something like Audacity to convert them to MP3.
