You can't.
Formatting has been reduced to nothing. (You can change the Font if you set Reduce Transparency in System Preferences > Accessibility.)
You cannot change a piece of text and link it to an URL.
You cannot change the colour of the Font or the balloons any more.
However not all of this is Apple's choice as there have been issues in the past with Linked text holding code instead of URLs and corrupting things particularly with the AIM service.
Twice they have stopped Hyperlinks over AIM.

Technically iMessages has it's own encryption so apple could allow it.
At one time Apple IDs used over the AIM server could do @Mac. encryption (It was a long while ago) but this was not compatible with the AIM encryption used at the time.
The trouble with Hyperlinks is that they get around this.
It would be easier if apps that don't allow it gave feedback that the URL would have to be sent in plain text.
I think the current way is very lazy really.

I just looked at AppleScript and the "Dictionary" for Messages.
This gives a list of the items and titles of things to help you Script things for the app.
There is no handle listed for URLs to make it a Hyperlink
If there is a Menu Item for something like this but no Keystroke listed you can create them in System Preferences > Keyboard > Shortcuts.
In here I have one for Mail to add a Hyperlink (from and Older version that did not have it).
It is currently CMD + k in the current version.
I tried creating one but it has to have a Menu item already.
