Achieving the same sounds on the iPad onto my macbook

Hey guys,

I use GarageBand on both my iPad and my Macbook and I understand that the layout is different on the two devices. On the iPad you are able to select certain instruments (i'll use the strings as an example). When you select chords, I am able to pluck and create other different sounds depending on the way I move my finger across the different chords. I like these different effects and would like to replicate them on my macbook. I will either use garageband or Logic pro to achieve this. I was wondering how you create a plucking sound or a long strung sound in the piano role. I also am looking for a similar instrument to the one they use in the iPad version. I know I can create the sounds of the cello and the 1st
