Transfer data from iPhone 4S to iPhone 5

iPhone stores nothing on the SIM card.

You should be syncing everything with your computer. The phone is not a storage device. It mirrors the selected content of the computer to which it is synced.

Is everything not on your computer?

You can back your iPhone 4 up to iTunes or you can back it up to iCloud. Then when you set up your new device, you will be asked if you want to set it up as new or restore it from a backup. You will want to restore it from your backup:

SET UP NEW DEVICE FROM BACKUP

the only purpose the sim card has it to tie the phone with the carrier subscription

a sim card when put in a phone make the phone ring when the number is being called

nothing is downloaded or uploaded from the sim card to the phone ever
