How do I change the country/zip-postal code for my Apple ID account. When I enter my US mailing address, it only gives me options for Canadian provinces and postal codes, not US states & zip codes to pick from the drop down box.

It sounds as if you are currently located in Canada, or are trying to use the Canadian Store. Make sure you have selected the US store, and are physically located in the US.
You need to log out of your iTunes Store account, from whatever device you are on. Because you are logged into the Canadian Store, it is blocking your updating your Apple ID account.
I'm assuming you are trying to update the Apple ID. Are you still physically located in Canada? If so, you will have difficulty changing to the US store.
I was located in Canada when the Apple ID was set up, but I changed and selected my country as US. My mailing address still shows a Canadian province drop down box. Any suggestions? This is as hard as immigration (just joking)!
I am physically located in the US and have entered my US mailing address, but still not luck when trying to get Apps...it has not updated and still asks for province, rather than state.
