The document you came from explains that: About the iPod Photo Cache folder

The iPod Photo Cache folder will be created in your photo library, when you sync photos from iPhoto, Aperture, or Photos.

What is the problem? Which of the photo applications are you using, and why do you want to delete the cache? It is not in iTunes, but in your photo library after you synced photos.

If you're syncing from a Photos, iPhoto, or Aperture library, use the steps below to find the iPod Photo Cache folder in its default location:

  1. From Finder, choose Go > Home from the menu bar at the top of your computer screen. If you moved your Photos Library, iPhoto Library, or Aperture Library to a different location, go to that location instead.
  2. Open the Pictures folder and locate the Photos Library, iPhoto Library, or Aperture Library file.
  3. Control- or right-click the file, and then choose Show Package Contents from the pop-up menu.
  4. In the window that opens, click on and drag the iPod Photo Cache folder to the Trash.
Don't remove or modify any other file within the library package. Removing or modifying other files might cause data loss.
  5. Close the window.

The iPod Photo Cache in the library of the photo library you last used to sync with iTunes.

iTunes says i have over 5,000 photos on my device which i believe is stored in the iPhoto cache.

To delete the synced photos from your device sync again and deselect all albums when you sync again. Set the sync für photos to "selected albums", but don't select any albums.

The iTunes photo cache is on your Mac and not on your device. If you have photos on your iPhone that you cannot see and delete, you may have a problem with ghost pictures. It is a bug in iOS8.

In some cases it helped to change the date on your iPhone to a date before you installed the iOS8 upgrade.

Set the system time to well before the start of the year.

Then open the Photos.app on the iPhone and check the "Recently deleted" album. This may make photos appear in the album that have been hidden because of a bug, and you may now be able to delete them from the device.
