5th Gen iPod Music Player Settings

I've recently upgraded my 3rd Gen iPod Touch to a 5th Gen iPod Touch and ever since I really hate the music player. I prefer to listen to an entire album at a time, but now once it finishes it automatically starts playing the next album by the same artist. I've scoured the settings and can't find a way to deactivate this feature. I would also like to remove the album art from showing on my iPod as I don't have most of the album art and it takes up a lot more space on the screen unnecessarily. I would like to be able to sort by artist and once selecting one see all albums that I have for each without scrolling around to find the one I want.

I really dislike the changes that were made and would like to have much more control over the settings.
