apple watch always thinks I'm sitting

Why does my apple watch think I'm always sitting? I have a sit to stand desk, and have been standing at it all day today (been at work for 5 hours now), and my watch is only showing that I've stood 3 out of 12 hours.

The  Watch records the act of standing up from a sitting position and moving for at least one minute. If you stand for several hours it will not record any "Stand Up" actions because you did not get up from a sitting position.

I regularly hike and backpack. I'll complete long exercise and movement sessions while hiking but the  Watch will not record standing up. If I stop for lunch or a break and sit down for a short time, when I get back up to start hiking again I'll receive credit for Standing Up.

From numerous experiments I've done (Apple is utterly silent on this point ...) it determines you are "standing" if the arm your Watch is on is perpendicular to the ground.

For example, I'm left handed, I carry my purse over my left shoulder, and I hold onto my purse (... to keep it from getting snatched or just because it's a habit ...). That behavior doesn't get recorded as "Standing", even if I'm walking around a parking lot.
