When I tap the three dots next to a song, one of the options is "Add to My Music." I tap this, it shows a check mark that it's been added, but then is nowhere to be found in my music list...is this a bug, or am I overlooking something?
Nevermind, I found the issue. If anyone else is interested, under the sorting menu, there's a "Music Available Offline" toggle switch to only show music stored on the phone or in the cloud.

WWhere is that button?
go to my music tab and scroll to the top of the list of your music and where you click to sort by Artist/Album etc, it's it there.
