Possibly Apple will let users pay for the monthly subscription with a gift card, and then pause the service and notify users they need more balance to use Apple Music?

Yes, if you have stored credits on your account, once the Apple Music starts your monthly subscription, it will be deducted to your stored credits. If you don’t have sufficient store credits and don’t have credit card on file, the subscription will be on hold.
Also, if you start the free trial period with a gift card in your account, the balance in the gift card must be enough to pay for your first month. So it looks like you will be able to pay using a gift card. Hope this helps!

So yes, they use your Gift Card Credit first, then move on to your credit card once that is below $9.99.
