How does the new iTunes work

Again, another version if iTunes, and I still cannot edit my playlists. I have had the same playlists for the last 3 years and I'm tired and bored. I downloaded the latest version if iTunes, saw the edit playlist button, but all it did was add a picture to the name of my list. I want to swap and replace music. How do I do this.
