Where can I change the look of my playlists. Used to be able to change it to Large, Medium or List view, but can't seem to do it now.

~Also, on older version could click on the shuffle icon for individual playlists, now with iTunes12 it's either on or off for all playlists, will be looked into so I can set it for the ones I want to shuffle.

No, playlist no longer remember whether they shuffle or not. You can however make a smart playlist that is a random selection from a set of rules. In the Songs list view you can right-click on the artwork to control size or click on the view selector to disable artwork altogether.
