My device is an iPhone 5 with iOs 8.4
I have reinitialisated my apple account (ID and password)
Before I didn't used the iCloud.
Now I would like to use it but in the parameter of iCloud on my iPhone appears my previous account ID for which I haven't the password anymore.
How can I reinitialize that iCloud account with my my new apple account and without the password of the last account.

Reset the password of the old account here:

Then once you have logged onto the iPhone using the old
AppleID and passcode, do these items in the order given:
Prepare your device to sell or give away
Once you have done that, set up the iPhone as a new iPhone using
your current AppleID and passcode.
Reset the password of the old account here:

The difficulty is that I can't reset the password of the old account because that account is my old email adress which doesn't exist anymore...

It does not matter that the old email address does not exist. It is only
a placeholder to allow you to log in. Reset the password and do the
other stuff linked above.
I understand but the new password will be sent on the previous email adress that doesn't work anymore

Did you have a separate rescue email?
If not, dig up the receipt that proves you were the original purchaser of the
iPhone and take that receipt along with the iPhone to a physical Apple store
where they may assist you.
