In need of HELP!!!!

How do I retrieve my old backups without Time Machine?

This is extremely important and I need a method that works for my backups are constantly replaced and I cannot get the ones that I need. Everytime I wish to restore my phone it takes me to a new backup it had created itself, so now I cannot retrieve important content. It would also be helpful if the retrieved backups could be used to restore my current iPhone.
